Fish batter at cookline temped 68°f at fryer, real butter blend temped 66°f sitting on cookline countertop, coconut cream pie , stawberry cream pie temped 48°f at front display counter, same cooler had an ambient air temperature of 47°f. All of these Products were not in the process of cooling or preparation. Corrective Action: operator placed more ice under batter, butter was cold held at 41°f, operator stored pies in an environment that was 41°f or lower.
