It was placed in the unit around 10:00am and tempted after 3:00pm. It will not be able to cool down to 41F within the next hour. COS-discarded. The ambient air temperature of the unit was reading 34.7F. (Note: talked to the manager about using an ice bath or placing the gravy in the walk in freezer to help bring down the temperature quicker).
KDA_3_50115B - --There was condensation on the lid to the gravy container. COS-gravy was discarded due to not cooling down to 41F within 6 hours.
KDA_4_60111A - --On the rack above the 3 compartment sink there was one (1/9) plastic food grade container with sticker residue left on the outside and stored clean (can hold bacteria). COS-moved to the ware wash area.
KDA_4_60111C - --There is dust build up on the ceiling and fan blowers in the walk in cooler that holds dairy products and sandwiches.
