KDA_4_70211 - --Sanitizer level at the dish machine did not register when tested. Employee was actively doing dishes during inspection. Manager tried priming the line for several minutes and it would not pull sanitizer into the machine. Corrected on site (COS) - repairman contacted and arrived during inspection.
KDA_Defacto - --Cold Holding: Walk in cooler #1 - deli ham 38.8F. Walk in cooler #2 - 39F ambient. Freezers ok. --Cooking temperature: chicken wings 200 F. --Wiping cloth sanitizer tested at 100ppm chlorine.
