Please be aware that raw fish, including shell fish, pose a high risk for allergen cross contact and must be stored so it can’t contact other foods.
- KDA_3_30412B - --In deli kitchen, scoop to chicken breading container handle touching top of breading. COS-Department manager relocated scoop.
- KDA_3_50116A2 - --In condiment station, Pico sauce 63.1. refrigerated condiment station ambient air was 76.5. COS-Manager chose to discard Pico sauce VD and turned on cooler. Cooler had ambient air 35.4 when condiments returned to station. Retail cooler by register, Salted butter 45.2, raw bacon 47.0. COS-Manager chose to relocate food items to back area refrigeration until cooled to 41.0. Ambient air in cooler was 41.9 and effected product was over stocked out of the cooling zone almost 4 hours earlier.
- KDA_4_30111 - --In condiment station, refrigerated unit with ambient air temperature 76.5 with food products over 41.0. COS-Manager discovered unit had not been turned on when line set up. Manager chose to discard food and turned on unit then once unit reached 35.4 food products were stocked.
- KDA_4_60111A - --In deli, back kitchen area, knife on can opener dirty with build up of grease and dirt. COS-department manager took to dish area and had employee clean.

- KDA_Defacto - --3 compartment sink 300ppm quaternary ammonia by facility QT-44 test kit. manufacturer label 150-400ppm quaternary ammonia (parts per million) --Dairy cooler, milk 41.2, deli walk in cooler, Raw chicken 412.8, cooked chicken 30.3, 30.6, cheddarwurst 38.9, polish dogs 32.8, jalapeno dogs 32.9, gizzards 41.1, Display coolers, cooked chicken 42.6, hummus 40.6, sliced turkey 40.3, potato salad 41.9, yogurt 41.3, 40.7, dairy cooler, milk 41.6, pico sauce 35.4, pork 34.4, meat display pork 41.9, raw chicken 41.2,ground beef 39.2, steak 39.4, frozen foods ok. (walk in freezer over stocked so access was not complete) --Discussed silo system with store manager on raw beef over raw chicken and raw turkey bacon over raw bacon. Manager is addressing display to correct. --Facility uses time as a public health control for cooked pizza's prepared on site. Manager showed written procedures and documentation on pizza's that were found to be in display case and out of temperature. --In deli display cases, cooked chicken 147.9,136.7 potato wedges 143.9, Chicken gizzards 157.9, mashed potato 148.6, Cheddarwurst hot dog 148.3, hot dog 147.3, nacho cheese 140.3, --Kroger distribution --Note: discussed with manager about keeping 1 format for date marking in walk in cooler in deli. Items had expiration date written on open packages and others had open and discard dates.
