The large pans she was cleaning were being put in the sanitizer water for approximately 10 seconds or less prior to being set to the side to dry. Upon checking the bottle label, the label calls for 60 seconds of contact time prior to air drying. Corrected on Site (COS) - let employee know what the bottle label directs for proper sanitation. She resanitized the pans.
KDA_7_10211 - --There is an unlabeled bucket with a wiping cloth inside in the sink. The kitchen manager said it was the sanitizer that she plans to remake for wiping down the tables. She said the bucket label comes off every time they run it through the dishwasher to clean it. COS - she relabeled the bucket.
KDA_Defacto - --Hot Case: Pizza - 137.3 F --Hot water dishwasher - 165.0 F Quaternary Ammonia sanitizer in sink - 200ppm (Label calls for 150-400ppm) --Quaternary Ammonia test strips provided. --The mop sink has an AVB with a Y splitter with shut off valves downstream. Air gaps are provided for the hoses coming off this Y Splitter. --The spray head at the garbage disposal is hanging down close to the sink. It still hangs outside of the flood rim at this time, but letting staff know that as the spring wears off more it will need to be kept hooked up out of the sink to prevent it from hanging down inside the flood rim. --White Cooler: Milk - 35.6 F, Milk Cooler: Milk - 35.6 F
