The PIC stated she did not know where the sick policy on site was. Another manager did show up and showed the PIC where the sick policy was.

Duties of PIC Person in charge did know the 5 food borne illness and symptoms but did not know what to do if an employee had diarhea or vomitting symtoms. Note: the person in charge shall exclude the empoyee unil 24 hours has surpassed after symptoms have stopped.
Poisonous or toxic materials used and applied The sanitizer was 100 ppm during inspection. The person in charge remixed some new quat and the quat was operating at 200 ppm when I left the inspection. Corrected at time of inspection
