Observation: Towel dispenser at handsink was empty.

Observation:Large plastic container used for cinnamon was caked with grease after warewashing. Numerous lids on rack of clean dishes still had old date stickers stuck to the lids. Also, lids on food in walk in had several stickers on top of one another.
- Food temperature measuring devices are accurate to ±1°C or ±2°F in the intended range of use
Observation:The thermometer being calibrated was not the thermometer used to measure food temperature. There was a 7deg F difference in the facility thermometer and my thermometer and the other facility thermometer in the prep table.

Observation: Thuroughly clean food and other debris from floors under shelving across from dish machine, behind stainless tables near handsink, and around perimeter of facility.

Observation:There were several order tickets stuck to the fan on the pizza prep table enabling the cold air to circulate. Tomatoes were 58 deg F, black olives, sausage, refried beans all 47-50 deg F. All PHF was discarded.
