Observed metal and plastic trays with visible debris on clean side of dishes. Items were recleaned at time of inspection. Observed small orange trays with cut marks and chips making them not easily cleanable.

Observed grease extraction hose stored on cardboard that is heavily soiled. Observed frost in walk in freezer ceiling. Sheilds missing on charbroiler. Inside cabinet under make line where electrical panel is is soiled with food debris. Undersides of cubbies above make lines are heavily soiled.

Extra greasy items were being precleaned, washed, then sanitized in hot water. Operator was informed of wash, rinse, sanitize procedure at time of inspeciton and informed to preclean then set sinks up again. Observed clean trays stacked wet.
