- Sanitization methods - hot water, chemical
Facility is not using sanitizer for washing utensils or sanitizing contact surfaces (counter tops, tables, etc.). MUST set up ware washing as 1) Wash- with warm water and soap 2) Rinse- with plain water 3) Sanitize- with a warm bleach water solution or quat. (can get at a restuarant supply store). Must also, sanitize counter tops and other surfaces to prevent food contamination. Handout given.

- Test kit provided and used to measure sanitizing solution concentration
Provide test strips for saintizer to ensure proper concentration. If sanitizer is too strong, it will be toxic to food and if it is too weak, the solution will not sanitize properly.
