Person in charge (PIC) said they had been removed from the WIC approximately three and a half hours earlier. Ambient temperature of unit was 52F. COS: moved to walk in freezer (WIF) for rapid cooling. Cole slaw in the RIC under the hot hold cabinet was at 51F. Hot dogs in the RIC under the hot hold cabinet were at 47F. Containers of rice in the RIC under the hot hold cabinet were at 49.7F. Ambient temperature of the unit was 52F. PIC said they had been in the cabinet for more than four hours. COS: discarded. Sliced tomatoes in the RIC under the maketable (MT) were at 45F. PIC said they had been removed from the WIC approximately three and a half hours earlier. COS: moved to the WIC for cooling. Lettuce in the top of the MT was at 58F. Sliced tomatoes in the top of the MT were at 48F. PIC said they had been in the top of the MT for approximately four hours. COS: PIC chose to discard. Two containers of chili in the RIC under the MT were at 51F and 49F. PIC said they had been removed from the WIC longer than four hours ago. COS: PIC discarded. 50/50 mix at the ice cream topping table was at 49F. COS: discarded. Whipped topping stored next to the mix was also discarded as a precaution.
