The purpose of today's visit is to conduct a risk factor assessment inspection.
Critical: Discard RTE, PHF(TCS) if Not Consumed Within 7 Days at 41°F (Unless Frozen) (corrected on site) Observation: Observed the following ready-to-eat, potentially hazardous food being held for more than 7 days at 41°F: gallon of milk 11/04/2015
Correction: Foods shall be discarded if it: 1) exceeds 7 days or at 41°F (except the time it is frozen)
Critical: Certified Food Manager/Presence Required (corrected on site) Observation: There is no Limited Certified Food Manager present at the beginning of the inspection.
Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a Limited certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. ---CFM has arrived during the inspection.

The purpose of today's visit is to conduct a routine inspection. EHS recommends to use the monthly menu to record received food temperatures.
Duties / Inspect Foods upon Receipt Observation: Observe food catered to the facility are not recording received temperatures.
Correction: The Person in Charge or certified food manager shall designate employees to inspect the food upon receipt from the licensed vendors. The employees shall visibly observe the foods as they are received to determine that they are from approved sources, delivered at the required temperatures of 41°F or less, 135°F or above, or frozen solid, the temperatures of the foods are documented in a daily log book, and protected from contamination.

The purpose of today's visit was to conduct a routine inspection. No violations were observed. NOTE: Facility Manager DN indicated pending renovation and improvement of the kitchen area. EHS advised to consult Plan Review by calling 703-246-2300 prior to beginning renovation work. No violation noted during this evaluation.
