    Observation: Food package not in good condition - dented food can.
    Correction: Discard or return to distributor any food packages that are not in good condition.
  • Food Storage Containers - Identified with Common Name of Food
    Observation: Unlabeled food container of white powder in storage room.
    Correction: Label food containers of foods that are not readily identifiable, i.e., salt, sugar, corn starch, etc.

    Observation: Rice scoops improperly stored between uses.
    Correction: Store rice scoop in one of the following manners: 1) On a clean preparation table or cooking equipment that is cleaned and sanitized every 4 hours, 2) In at dipper well, or 3) In a container of water maintained at 135°F or more.

    Observation: Cauliflower at buffet at improper hot holding temperature.
    Correction: Maintain hot foods at buffet at 135°F or above. Maintain water level in steam table in contact with food pans.

    Observation: Food stored less than 6" above the floor in the walk-in freezer..;Elevate food storage onto approved shelving with minimum 6" legs or casters. Recommend a dunnage rack, shelving units, or pan rack.
  • Temperature Measuring Devices
    Observation: There was no thermometer in the top-loading bar cooler.
    Correction: Provide a temperature measuring device in bar top-loading cooler.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Cracked lids on bulk food storage bins.
    Correction: Replace cracked storage bin lids.

    Observation: Large ladle remains soiled with food debris after the wash cycle.
