Critical: Cooling* (corrected on site) Observation: Sweet potato noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Operator discarded the sweet potato during the inspection. Product was 44 in the middle 38 on the edges. Discussed using the freezer as part of the cooling process and verify cooling process. All other items were cooled properly form the previous day.
Warewashing Machines, Manufacturers' Operating Instructions Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. The pressure for the high temp dishmachine reading at 10 psi.
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized. Maintenance is aware of the pressure problem and has a plumber coming to look at the issue. Pressure should be with 15 to 25 psi for the rinse cycle.
Plumbing System Maintained in Good Repair Observation: Handsink in the dishwashing area, the three capartment sink faucets, and the booster heater for the dishmachine is leaking.
Correction: Repair and maintain all plumbing components ans fixtures.

Backflow Prevention Device, Design Standard Observation: The backflow or backsiphonage prevention device installed on the mop sink is not identified as meeting standards set by the American Society of Sanitary Engineering. This device is not designed to operate under constant pressure. Facility using a Y connection on the mop sink that leaves the vacuum breaker under constant pressure.
Correction: Provide the approved backflow or backsiphonage device for the specific application and type of device to prevent contamination of the drinking water system. Either remove the constant pressure by removing the Y connector that and cutting the water off by the faucet or provide a backflow device that is rated for constant pressure.
