Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: EHS observed accumulation of debris (1) inside bottom of prep refrigerator 1, (2) inside bottom of refrigerator 1, (3) inside bottom of freezer 1, (4) inside of both blodgett ovens noted in need of cleaning, (5) storage freezer 1 noted with food debris inside bottom of unit.
Correction: Maintain nonfood-contact surfaces of equipment clean.
- Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
Observation: Floors under equipment in the front prep area noted with an accumulation of debris and grease and also noted flooring under some of the equipment in the back kitchen area with grease and food debris buildup, particulary in the area of the two blodgett ovens.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

- Warewashing Machines, Manufacturers' Operating Instructions
Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. Ran wash cycle three times: 120, 135, 142 degree F. Wash cycle must reach at least 150 degree F per data plate instructions.
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
- Non-Food Contact Surfaces (repeated violation)
Observation: The nonfood contact surface of the flyer area has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Correction: Plumbing systems and components shall be maintained in good repair.
