Very clean and orderly facility observed. Hand washing sinks available and in use with warm water, soap, and towels. 3-C Sink and Sanitizing all at proper levels. Testing strips available. Person in charge knowledgeable about food safety and answered questions correctly regarding cook temperatures, cold holding, hot holding, and employee health.Keep up the great work! New ceiling and lighting has been installed.

Hand washing sinks available with warm water, soap, and towels. Reviewed food safety information with PIC. New kitchen ceiling and adequate lighting is in process of being installed. Walk-in refrigeration and freezers have had major repairs and are functioning great. Left food safety training literature with PIC.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million and the water temperature is at 120°F.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Dirty refrigeration handles, gaskets, and doors of all units within kitchen prep areas.
    Correction: Maintain nonfood-contact surfaces of equipment clean by placing them on a routine cleaning schedule.

Hand washing sink available and in use with warm water, soap, and towels. Sanitizing wiping cloth solution available and in use at 400 ppm. Testing strips available and in use for dish washing machine. Dish washing machine is OK. PIC has good food safety knowledge. Reviewed food safety information with PIC. Maintenance personnel has been called to repair sandwich preparation unit that should be running colder after peak use and 2 door Delfield refrigeration unit for condensation problems. Grill hood surface areas to be cleaned. Test strips for QT are to be ordered.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Two door Delfield Refrigerator was observed in a state of disrepair and damaged with water dripping from refrigeration unit inside refrigerator.
    Correction: Repair the refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the food prep units are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Exterior windows in kitchen are not maintained in good repair (broken glass in windows over 3 compartment sink).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
