    Correction: Item corrected- at time of evaluation and implemented glove use.
    Minimize bare hand and arm contact with exposed food that is not in a RTE form to reduce the potential for contamination.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    OBSERVED RAW SHELL EGGS STORED ABOVE RTE LETTUCE.
    Correction: STAFF REMOVED EGGS FROM ABOVE THE LETTUCE AT TIME OF EVALUATION. Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
