Dish machine: Wash - 170'F, final rinse 190'F No risk factors observed out of compliance. Discussed: Ensure to go containers are stored inverted so the food contact surface is not contaminated. Cooling methods: Observed ambient air cooling of corn. Recommend leaving container uncovered and/or using smaller containers to allow air flow and ensure that food is cooled to 41'F or below within 4 hours. Corn measured at 68'F.
