Facility participates in summer feeding program. Food is delivered from Richmond Parks and Rec. Cold foods are delivered because hot foods were sometimes delivered frozen and it took too long to reheat. No critical violations.

Discussed proper cooling of leftovers. Try not to have leftovers since you only have homestyle refrigerator. Rice was 98 F and yams were 104 F. Foods are to cool from 135 F to 70 F within 2 hours and then down to 41 in 4 more hours. Do not cover or stack food containers while you are cooling. Use your thermometer to verify your cooling processes. Permit expires 4-30-14. I will recheck water. You may call to give me a status on the heater.

    Observation: Deli ham had no date marked when opened. Fish sticks had no date.
    Correction: Date upon opening deli meat or when prepared.

    Correction: Ensure that water heater is turned on and set at proper operating temperature. 110 F is required at the 3-c sink. 100 F is required at handsinks. PIC turned gas water heater to a hotter setting and water heater kicked on. Retest temperature in another hour.

Recommend sealing/painting interior of kitchen cabinet. Provide menu. Contact paper must be kept in good repair. Water >110 degrees.Refrigerator 35.6 degrees. Gloves, thermometer - ok. DOK passed.
