Kitchen and all equipment observed to be very clean and well maintained. The above observations and the following were discussed with the person in charge: -Please seal the handsink, rinse sink and 3 compartment sink to the wall. -Ensure products used for the catering business are kept separate from the church products. -Lockers provided for employees personal belongings. -Quaternary ammonium sanitizer used in the 3 compartment sink, test strips provided. -Thermometer and gloves provided. -Employee health policy discussed, provided. Plan review conducted for facility. The following areas were discussed with the person in charge: -Ensure a backflow prevention device is provided on the water line of the bulk ice machine. -All foods are being cooked to minimum cooking temperatures, no prime rib, etc. being served/offered. -Provide an employee health policy, handouts will be given at pre-opening inspection. -Indicated using 400 ppm quaternary ammonium (QT-10 test strips) fro sanitizing food contact surfaces, advised too strong. Only use 200 ppm. -Ensure the hood is being serviced by professional company. -Ensure foods used for catering business are kept separate from foods used for church. -Additional handsink may be required.
