Observation: The food on display is not protected from contamination. Display for oatmeal toppings are not covered when set up for breakfast.
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.

Observation: The ready-to-eat (RTE) commercially processed cottage cheese and chicken breasts in the refrigeration unit were not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. PIC placed appropriate date on items.

Observation: There was no temperature measuring device located in the 3 door unit at coffee station.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

I recommend keeping a temperature log on all refrigerators/freezers and dishmachine since you have different employees running the kitchen. All to be responsible for proper holding temperatures. Unit may require more adjusting to ensure less than 41 F food temperatures at all times. When summer rolls around opening doors/lids may cause unit to have a higher temperature. You must monitor units. Permit issued.

New Owners. Do not store coffee equipment on cloth towel. Use proper drain board. Make table where bulk of food is held has marginal temperature of 42.4 F. Maintenance turned unit down but outcome is unknown at this time. PIC to monitor temperature and call me tomorrow morning with temperature. I cannot issue permit until this unit is working satisfactorily (less than 41 F).
