This ia a follow-up to check on the repair of four (4) 1-door coolers and one(1) walk in refrigerator. All units have been repaired and are now capable of maintaining potentially hazardous food at 41f or below. Monitor the food tempertures inside all five units to ensure that they are holding at 41f or below. No further follow-up necessary at this time. Thank you. The purpose of today's visit was to conduct a risk factor assessment inspection. Employee Health Policy in place. Observed foodworkers washing hands and properly using gloves during inspection. Sanitizer in the sanitize basin of the three vat sink is observed within acceptable limits. Observed facility clean and organized. Important: 4-501.11(A) Unit good Repair-- The following units are not capable of maintaining potentially hazardous foods at 41f or below: 1. The walk in refrigerator (unit #10), 2. The Traulsen upright 1 door (unit # 14) 50f-(observed in defrost mode at 11:00am), 3. The Traulsen upright 1 door cooler (Unit #19) observed in defrost mode at 11:10am), and the Traulsen upright 1 door cooler (unit #13) 58f observed in defrost mode at 11:20am today. Corrective action: If potentially hazardous foods were stored inside these units for 4 or more hours, discard. Do not use these units or accept any more deliveries of potenitally hazardous foods to store in the walk in refrigerator until it is capable of maintaining potentially hazardous foods at 41f or below. Some foods discarded during inspection. Some foods which were in a cooling state, were moved to the walk in freezer to continue cooling. Some foods were relocated to the walk in freezer to cool down and hold at 41f or below if they were held cold for 4 or less hours and are potentially hazardous. Manager called for emergency maintenance during inspection. See note to file regarding plan for storage of cold foods during repair of the walk in refrigerator.
