Warewashing Machines, Manufacturers' Operating Instructions Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. Indicator states wash probe error and not meetin180F wash.
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
Mops - Drying Mops (repeated violation) Observation: Mops not hung up to air dry. Mops observed stored in mop bucket
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use. Store mop hung with mop heads facing downward

Routine
Food workers knowledgeable on temperature and illnesses to avoid food borne illnesses. Foods are all precooked food items at facility. Wiping bucket need to be stored off the floor. Make sure that is corrected before next inspection. Temperature logs of dishwasher, sanitizers and cold/hot holding unites are maintained. EHS provided posters on cooling, storage allergens and illnesses.
Critical: Food - Safe and Unadulterated* (corrected on site) Observation: EHS observed several whole tomoatoes in walk-in refrigeration with mold.
Correction: Ensure food is safe and unadulterated. Items were discarded.
Critical: Package Integrity* (corrected on site) Observation: Food packages are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants (ex: dented food cans). Dented can in walk in for use observed dented on seam. EHS educated PIC on what to look for.
Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants. PIC removed item.
Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site) Observation: According to the ""consume by"" date on the commercially processed ready-to-eat (RTE) salsa in the refrigerator, the food should have been discarded 1-2 days ago. Observed salsa with a disposition date of 9/15 and one at 9/17.
Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. EHS educated PIC on importance of discarding according to disposition date. PIC discarded item.
Mops - Drying Mops Observation: Mops not hung up to air dry. No mop hanger observed. Mops must be hung with mop heads facing downward to prevent contamination of handle and hung to allow proper air drying to prevent pathogen growth.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

EHS Mason Hoggard discussed with manager the importance of keeping dented cans in a separate area for return or disposal. No violations at time of inspections, overall facility was very clean and organized. No violation noted during this evaluation.
