Several foods on the make table exceeded 41 degrees (per cook, these items have been on the unit since the morning - 6 hours). Temperatures of foods in the low boy exceeded 41 degrees. Corrective action: do not use the noted foods for sale/consumption (employee opted to discard foods).

    Correction: Remove the food items from this unit until serviced (per owner, it has been serviced 2 times and was maintaining proper temperature). Items were removed and placed in walk-in.
