    Observation: The prepared ready-to-eat (RTE) food in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Correction: Discontinue the reuse of single-use items.

    Correction: Hand soap must be provided at all hand-sinks at all times.

    Observation: Paper towels were not provided at the kitchen hand-sink.

    Observation: Medicines are located in cabinet with food containers and in the refrigerator directly on top of foods.

Establishment with an adequate metal food stem thermometer. The hot water in the kitchen was at 123 degree Fahrenheit. Management passed the demonstration of knowledge food quiz. Training material given to management included: three vat sink set up and usage, food glove usage, hand-washing techniques, cleaning and sanitizing practices.
Note: The water sample dated 2-13-12 was negative for Coliform and E. coli.
