| Violations and inspection report were discussed with the PIC. New England Clam Chowder was cooling at 92 degrees at 1:00pm, and is now 45 degrees at 1:23 pm. The Manitowoc 3 door refrigerator was emptied of all potentially hazardous foods because of its very slow recovery time. The PIC has been monitoring its temperatures and has contacted her refrigeration technician about a replacement. This unit was last serviced on 08-07-14. In the meantime, the walk-in is being used to refrigerate these foods and will remain there until a replacement is installed. No hot holding. Opens at 5. Good datemarking! Very clean establishment.

| Violation and inspection report was discussed with the PIC. Correction made to previous violations dated 04-04-13: 1770A, 2350 Very well organized kitchen! Mop storage correct. Excellent! Manitowoc was serviced on 06-7-13. Still not recovering well. (50 degrees at 2:18 P.M.) Cold holding of PHF are not permitted in this unit until this unit is repaired and can maintain cold holding temperature of 41 degrees and below.
