If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Operators needs to verify that all product is immediately reheated to 165'F or above prior to the product being placed on the buffet table. Existing pan of product to be discarded when new product is restocked on the buffet table (no dumping of new product on top of old product).
