Observation: Observed employee handling apples (RTE, no peeling) that have already been washed with bare hands.
Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands. Rewash apples.

Observation: Observed white build up on the back of trays, when trays are stacked the food contact side is contaminated.
Correction: Have dish machine looked at to make sure chemical balance is right. Make sure trays are cleaned and white substance is removed from the trays prior to stacking them.

Observation: Right door of Hobart 3 door refrigerator, on the serving line side, does not close tightly.
Correction: Make sure that the door can close easily and tightly so that cold air can stay in the machine and the door does not stay open during service or possibly overnight.

Correction: Go through clean dishes and make sure pans are cleaned thoroughly before putting them back.

Correction: Clean the gaskets/seals of the equipment.

Observation: Alcove around the kitchen is breaking loose of the wall and the seals are breaking.
Correction: Have maintenance replace or reseal the alcove to the walls and make sure they are sealed properly.
