  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: The cleaning schedule for pizza cutters and bubble popper is not approved based on the consideration of characteristics of the equipment and its use, the type of food involved, the amount of food residue accumulation, or the temperature at which the food is maintained.
    Correction: The Bubble Popper and Pizza Cutter must be washed - rinsed and sanitized every 4 hours.

  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station at the pizza make table is being used for purposes other than washing hands. Thawing alfredo sauce.
    Correction: The handwash facility identified above is to be used for washing hands only Alfredo sauce in sealed bag was sanitized after removeal from handsink. Do not thaw in the handsink. Handsink is for hand washing only.

Food temperatures were within safe temp zone.
PIC asked to monitor same three items at 5 PM to ensure that unit is holding proper temps.

    Observation: Meats, sauce stored in piza make (under) observed out of safe temperature range
    Correction: Move meats, cheeses, tomatoes to walk-in until unit can maintain TCS foods at 41 degrees or less. All TCS foods moved to walk-in , repairman contacted

    Observation: The clothes (washer/dryer) is located in the back store room in an area that may contaminate (exposed food/clean equipment/clean utensils/clean linens/single-service articles). Machines are operating with the enclosure doors open.
    Correction: Relocate the washer or dryer so that exposed food, clean equipment, utensils, linens, or single-service and single-use articles can not be contaminated. Keep the enclosure doors closed when operating the washer and dryer.
