Observation: Louver doors in the dish washing area noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

All PHF's in prep cooler cold holding at 41 degrees or below. Manager made statement that during first inspection on 2/18/14 she forgot to turn the prep cooler unit on when she arrived. This would explain the high cold holding temperatures. At this point time as a public health control not needed.
