Observation: The nonfood contact surface of the lower shelf of the table holding the slicer is not corrosion resistant, nonabsorbent, and/or smooth. Noted in need of cleaning.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
- Equipment - Fixed Equipment, Elevation or Sealing
Observation: The Whirlpool and Hotpoint floor-mounted coolers in the back room are not elevated off the floor or sealed to the floor or on wheels or casters. A cleaning hazard exists (cannot reach under easily to clean, cannot easily move to clean behind and under.
Correction: Alter the installation of the equipment to allow easy floor cleaning. Make 1 of the following corrections: 1. Remove the equipment 2. Install casters 3. Elevate the equipment to a minimum of 6 inches off the floor 4. Seal the equipment to the floor
- Equipment - Cutting Surfaces
Observation: The cutting board(s) along the sandwich prep station are heavily scratched and scored. The surface of the butcher-block table is heavily scratched and scored. These food contact surfaces are no longer easily cleaned and sanitized due to condition.
Correction: Resurface the cutting boards
- Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
Observation: The handwash station at the 3-vat sink is being used for purposes other than washing hands. (Observed some equipment parts in the sink.)
Correction: The handwash facility identified above is to be used for washing hands only
- Outer Openings - Protected (repeated violation)
Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. A gap at the bottom of the back door (daylight is visible when door is closed) allows possibiility of access into the facility by insects, rodents, other pests. Door is no longer tight fitting.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
