When regulations change facility will need to supply test strips for the heat sanitizing dish machine that will change color when the dish reaches 160 degrees F. The manager will need a serve safe managers certificate.

Observation: The dish machine was observed in a state of disrepair and damaged. When water is running upstairs the dish machine does not sanitize the dishes.
Correction: Repair the dish machine to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the dish machine, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: Dish machine was observed in a state of repair and condition preventing effective maintenance and easy cleaning. When water is running in other parts of the building the rinse cycle does not sanitize the dishes
Correction: Replace or repair the dish machine to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

Observation: The water temperature gauge on the dish machine is not in good repair and/ or not accurate in the range of use.

Observation: The dish machine was observed in a state of repair and condition preventing the equipment to be used as designed. The dish machine does not appear to be spraying water during the rinse cycle. The temperature sensitive tape did indicate that the dish reached a high enough temperature to sanitize.
Correction: Discard, replace or repair the dish machine to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

Observation: The hot water dish machine was observed in a state of repair and condition preventing the equipment to be used as designed. The rinse cycle does not seem to be spraying water on the dishes. There is a build up of minerals on the inside of the machine and spray arms. This machine has been a problem in the past and may need to be replaced.
Correction: Discard, replace or repair the dish machine to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
