Handsink stocked with soap/towels. Employee health policy in kitchen. Good food/equipment temperatures observed. All foods cooked to order except for rice/soups. Raw meats/eggs stored properly. Test-kit available for monitoring sanitizer concentrations. Discussed the following with owner: repair of back screen door and repair of floor tiles in front of woks.

    Observation: Back screen door requires repair.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: The nonfood contact surface of the walkin storage racks are not corrosion resistant, nonabsorbent, and/or smooth.
    Interiors of all refrigeration/freezers must be cleaned on more frequent basis.
    Correction: Clean nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent
  • Cooling, Heating, and Holding Capacities
    Observation: Walkin refrigeration and small undercounter refrigerator were not holding required 41F or below. It appeared that the small undercounter was overstocked. The thermomstats on both units to be monitored.
    Correction: Insure that all refrigeration units are capable of maintaining foods at 41F or below.

    Correction:
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed improper procedure at 3-compartment sink.
    Correction: Instruct employees on proper procedure to wash-rinse-sanitize. Clean and sanitize these surfaces for food contact.
