  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: In use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed uncovered coffee cup sitting on the prep unit in the kitchen. Cup was thrown away during inspection.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The cooked sausage patties (48'F), cooked scrambled egg patties (47'F) and turkey sandwiches (50'F) stored in the make line prep unit were cold holding at improper temperatures. The sandwiches were placed in another cold holding unit and the other items were placed on ice. A service call was made for the unit during inspection.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the prep units, the reach in cooler and chest freezer in the kitchen.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine and quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

The hot water sanitizer dishmachine is not operating properly. The temperature registered - wash water at 180'F and the rinse water 160'F. Operator will utilize the 3 compartment sink for washing, rinsing and sanitizing until the dishmachine is repaired. Please submit a copy of the work order once the dishmachine is operating properly.
This facility is in substantial compliance and is eligible for a permit from the Virginia Department of Health.
