    --Ingredients trays stacked on top of uncovered trays on the shelf above the meat slicer table. The trays were covered with plastic wrap. *Food containers are stored on the floor, and not on shelves or palettes, under the storage shelves in the basement. The containers were placed on shelves.

    --Cutting boards are stained and scored.

    --Chlorine test papers to monitor sanitizer concentration are not available.

    --Debris, towels, containers, etc. are on top of the dishwasher. The area was cleaned.

    --Observed clean metal bowls on the shelf above the drainboard, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). The bowls were inverted on the shelf.
