--Freshly cooked oatmeal placed in hot well without having the well preheated to maintain product temperature. Internal temperature ranged from 110-128*F at 8:56AM.

--The top cold hot unit on the right side of the prep units shows extensive ice build up which is raising the inserts above the load level which may result in possible loss of internal product temperature. Unit appears to be malfunctioning due when compared to identical unit on left side of the line.

--The entire floor under the hot line shows an accumulation of spilled congealed oil, old food and non food material indicating lack of routine cleaning. The green Metro racks in the walk in cooler show dried food material and grey mold in various areas. The gaskets of the underators (sliding drawer refrigeration units) on the cold side of the line show old product build up.
