--Deli area bain marie used for making hoagies and other sandwiches was observed to be holding an ambient temperature of 49 dgerees F. Foods in the unit held an internal temperature ranging from 46F-48F. All potentially hazardous foods in this cold-holding unit were voluntarily discarded by the facility. Ice build-up was observed on the main cold air supply vent of the unit. This unit may not be used until it is repaired and holding an internal ambient temperature of 41F or below. Have serviced immediately.

--Grease and dust build-up on the hood filters of the deli area cook's line. Dust build-up was observed on the Produce walk-in cooler fan guards. These were cleaned at the time of inspection. Clean and maintain.
Cleanability of Floors, Walls, & Ceilings (46.921)
--Coving is peeling in the corner of the deli area near a plumbing fixture. Repair to create an easily cleanable surface.
Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
--Paper towel dispenser empty at the hand wash sink in the deli area. This was immediately resupplied by the facility staff and corrected on site.
Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
--Airspace observed at the rear receiving door. Create a tight seal to eliminate potential entry points for vectors.
Drying Mops (46.981(f))
--Mops are not being hung to air dry.
