KDA_3_50115B - --Ready to eat ground beef (68 F) was cooling in a sealed plastic food storage bag in the walk in cooler for one hour, as per employee.
KDA_3_50116A1 - --Setting on the serving line buffet: enchiladas 102 F, rice 118 F. The foods had been setting on top of the buffet wells for 15 minutes, as per employee. (COS-served out).
KDA_4_70211 - --Quaternary ammonia sanitizing solution was sprayed over large sheet trays on top of the 3-vat sink. The sheet trays were not soaked in the sanitizing solution.
