Recommend a hand sink in the taco bar area. KDA_6_10111A - --The tile floor in the west room is cracked with pieces of tile missing. Recommend the floor tile be repaired so it is smooth and cleanable surface in a food prep area. KDA_Defacto - --Business does have a 3 vat sink with drain board on one end. Educated that a 3 vat sink needs to be large enough to accommodate being able to clean 1/2 of the largest size of equipment in use and then turning to clean other 1/2. Educated drainboards need to be able to accommodate both dirty and clean dishes during hours of operation with the clean drain board large enough to allow dishes to air dry. --Business does have a service sink that is located next to 3 vat sink. Recommend this location for the hand sink locaiton and for the service sink to be moved to the mechanical room. --Business is adding a taco bar. --Business is planning on adding additional freezer units. --West room, that is planned for food prep area, has been used for storage of retail prepackaged food and it is also the furnace/mechanical room.
