COS - reheated white gravy to 165F and began cooling process all over again

Improper cooling methods. COS - reheated gravy, switched potatoes to shallow metal pans with no lids for rapid cooling in freezers or ice baths.

This appears to be caused by close proximity to large containers of hot mashed potatoes and gravy, bringing up the temperature of these items. Removed all the hot food from the cooler, and spread these items to allow more air circulation and rapid cooling.

  • KDA_4_20211A2 - --There are cracks and open holes in the interior plastic surface of the Admiral RIC. Cooked potatoes are in a cracked, broken dish tub. Ham steaks are in a cottage cheese container with a cracked lid.
  • KDA_4_60111A - --There is an accumulation of water, food debris, and mold on the bottom of the Admiral RIC. Sheet pans stored as clean on a shelf below a work counter are soiled with crumbs and debris. Plates for customer orders, stacked on a shelf below the steam table, are soiled with crumbs and food debris. There is a build up of crumbs and debris in the bottom of the ice cream freezer. Three knives are stored in a slot between the steam table and the front cutting board, and the slot is visibly soiled with food debris build-up. There is a build up of food debris, grease, and mold on the wire shelves in the glass-dr RIC in the kitchen, and in the door tracks and on the inside surfaces. COS on most of these items, but not on the RIC.
  • KDA_4_60111C - --There is a build up of greasy food residue and soiling all over the plastic salad bar, including edges, shelves on the ends, interior and exterior surfaces. There are food splatters and debris on the underneath side of the pie case, which is directly over the salad make-table. The front of the small ice machine (not in use), where the soda fountain dispensers are located, has a build up of sticky beverage residue. There is a build up of dirt, food residue, and debris on the outside of the white RIC in the kitchen, and on the outside of both microwave ovens. The insides of the shelving units holding bread and buns under the window are splattered and soiled, with a large trash can right in front of them. There is a build up of grease on the pipes over the griddle/deep fryer.
  • KDA_4_90311A - --Clean plates for customers are stored stacked with the food contact surface up, on soiled wood shelves in the kitchen, just above an open trash receptacle. Plates have visible splatters and soiling from the use of the trash can.

  • KDA_Defacto - --Glass-door RIC in kitchen - baked potatoes 40F, mashed potatoes 38F, white gravy 39F New Kenmore RIC - diced tomatoes 32F --No food is in the cooling process at this time. Food cooled since yesterday is all at proper temperature. Owner and cook say that all food is now being cooled in shallow containers, in an ice bath, and not stored in the cooler until the temperature is down to 41F or lower.
