KDA_3_50116A2 - --There was a large plastic food grade container of shredded cheese sitting on the cutting board of the make table and it tempted at 59.6F. The employee in the area said it was used to make breakfast pizza from 4:00am to 10:00am but he wasn't sure how long it had been sitting out. COS-discarded.
KDA_3_50118A1 - --In the RIC (below the make table) there was a plastic food grade container of sliced canadian bacon with a use by date of 12/02 (held past 7 days). COS-discarded. Also in the RIC there was a plastic food grade container of canadian bacon that was date marked 10/9. The person in charge said the date gun wasn't working properly and that it was the wrong date. It was supposed to be date marked as 12/9. COS-date marked the item correctly.
KDA_4_20211A2 - --In a utensil drawer there were 5 rubber spatulas that had cracked edges and 2 of the 5 had deep cracks on the food contact surface sides. COS-discarded 2 and trimmed 3.
KDA_4_60111A - --On the rack above the 3 compartment sink there were 2 plastic rubbermaid containers with label stickers left on them and stacked clean (can hold bacteria). COS-moved to the ware wash area.
KDA_4_60211E4 - --There is dried food debris build up in the dispensers of the cappuccino machine.
KDA_4_70211 - --An employee was washing dishes manually and there was no sanitizer detected at the 3 compartment sink. The first 2 compartments were set up and he said they utilize Quaternary Ammonia but 0ppm were measured. KDA 61 informed him to set it up as wash, rinse and then sanitize.
KDA_4_90311A - --In the back storage room there were 3 boxes of single us cups being stored directly on the floor.
KDA_4_90311B - --On the rack above the 3 compartment sink there were 2 plastic rubbermaid containers that were stacked wet/clean and not able to properly air dry. COS-moved back to the ware wash area.
KDA_7_20111A - --There was a working spray bottle of degreaser being hung on the rack above the 3 compartment sink (dirty dish side) and next to 2 clean metal bowls. COS-removed chemical.
