KDA_3_50116A2 - --In a ice bath (shallow metal pan) there was a plastic food grade container of shredded cheese at 47.5F and a plastic food grade container of cut cantaloupe at 55.6F. It was a shallow ice bath to where ice was just in contact with the bottom of the containers. The PIC said she placed them out around 7:45am and was tempted around 8:20am (less than 4 hours). Breakfast ends around 9:00am and will be discarded. COS-discarded. In the True RIC (where breakfast items are kept) there was a plastic food grade container of tuna salad (made on site) at 46.6F, yogurt at 44.1F, hard boiled eggs (shell off) at 49.0F, cooked chicken at 47.6F, ranch dressing at 50.8F, sliced tomatoes at 47.5F, thousand island dressing at 47.5 and cut salad at 54.5F. All of these items have been in the cooler longer than 4 hours. The ambient air temperature of the unit is reading 39.6F. COS-discarded all items. (Note: the door gaskets are torn on both doors).
KDA_4_50111B - --The door gaskets to the True RIC (located where breakfast items are held) are torn and do not provide a good seal. (Note: the house mom has someone come look at them so they can be ordered).
KDA_4_60111A - --On the counter in a white plastic tub there were 2 metal tongs with sticker/residue left on the handles and stored clean. COS-moved to the ware wash area. The large mixer had dried food debris on the metal surface where the whisk is inserted and not used today. COS-cleaned. In a knife holder mounted above the 2 compartment sink, there was one knife with dried food debris on the blade and stored as clean. COS-moved to the ware wash area. On a lower shelf across from the stove there was two (3L) plastic food grade containers with stickers/dried food debris, there was one (4L) plastic food grade container with sticker residue, there was one (1/6) plastic food grade container with dried food debris on the inside and all stored clean. COS-moved to the ware wash area. **These items can hold bacteria with stickers/residue/dried food debris.
KDA_4_60211E4 - --There is pink slim behind the plastic ice chute on the soda fountain machine.
KDA_4_90311A - --In the dry food storage room there was one box of napkins and single use cups/lids being stored directly on the floor.
KDA_6_20215A3 - --The back exit door has a 1/2" gap at the left bottom corner. This could allow the entrance for pests.
KDA_7_10211 - --There was a working spray bottle below the mechanical dish machine with clear liquid and not labeled. It was some type of cleaning solution, the PIC was not sure what it was. COS-discarded.
