  • Basic - Interior of refrigerator in disrepair/has exposed insulation. Reach in freezer chest in rear. Insulation falling off.

(Still within time parameter for cooling)Corrective action had manager move potatoes to reach in cooler and explained to employees time parameters and proper procedures for cooling food. Gave great ways for cooling form.

Display reach in cooler in front had ambient air temperature of 45°. Doors are constantly opened and closed. Had employee turn temperature of unit down. Food in unit still cooling and are within proper cooling time parameters. Re checked ambient air thermometer and it read 43°.
