Observed chopped tomatoes, cheese, gyro meat, cut melons between 48°F and 51°F. Chef moved food products to reach in cooler capable of maintaining foods at 41°F or below. Foods had been out of temperature less than four hours.

Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is capable of maintaining foods at 41 degrees Fahrenheit or colder. Observed main prep cooler at 51°F. TCS foods were moved to reach cooler capable of maintaining foods at 41°F or below.
