Closed lids and waited. Unit thermometer read again at 57 degrees F. DO NOT use unit to hold any potentially hazardous food until it has been repaired and can cold hold at 41 degrees F or below.
  • Critical - Establishment does not have a written copy of their approved Alternative Operating Procedure for bare-hand contact with ready-to-eat food. Have sheet stating it was approved per Ann Johnson and reference guide for handwashing properly.
