- Basic - Spray bottle containing a food product not labeled. Observed multiple spray bottles containing cooking oil, vinaigrette, etc (per chef on cook line) without proper labeling
- High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee prepare bread for clients without using gloves and chef prepare a cold dish that contains meat without using gloves. Spoke with floor manager to share my findings and he implemented glove use while still present.
- High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed pasta in walk in cooler at 55°F cooling correctly, pan, not more than four inches thick, and meat at 60°F at salad bar preped 45 minutes earlier. Cooling unit is serviceable.
- High Priority - Toxic substance/chemical stored by or with food. Observed sanitation bucket placed on same surface as food prep surface at the salad prep table.
