--OBSERVED RAW MEATS IN OPEN TUBS IN WALK IN COOLER STORED ABOVE PREPARED SAUCES IN OPEN 5 GALLON BUCKETS, ABOVE IMITATION CRABMEAT, AND ABOVE BOXED ORANGES IN WALK IN COOLER. NO PRODUCE, FRUITS, VEGETABLES, READY TO EAT FOODS, OR OPEN CONTAINERS SHOULD BE STORED UNDER RAW MEAT, TO PREVENT POTENTIAL CROSS CONTAMINATION WITH RAW MEAT JUICE. MANAGER MOVED THESE ITEMS TO CORRECT THIS VIOLATION ON SITE.

--OBSERVED COLD SALAD BAR TEMPERATURES (WATERMELON, FRUIT) OF 50F. MANAGER INDICATES THESE WERE PLACED OUT FOR LUNCH BUFFET LESS THAN 4 HOURS AGO. A WRITTEN SYSTEM MUST BE IN PLACE TO USE TIME INSTEAD OF TEMPERATURE, OR SOME ALTERNATE METHOD MUST BE USED TO ENSURE THESE SALAD BAR ITEMS STAY AT 41F OR BELOW.
- Preventing Contamination from Food Contact with Equipment & Utensils (46.301)
--OBSERVED RAW CHICKEN BEING PREPPED ON STAINLESS STEEL COUNTER, WITH BOTTLES AND APPLIANCES UNDERNEATH SUBJECT TO SPLASHING. MOVING THESE ITEMS WILL PROTECT THEM FROM CONTAMINATION WITH RAW CHICKEN JUICE. ALSO OBSERVED A CARDBOARD BARREL CONTAINING BREADING WAS BEING USED TO HOLD THE RAW CHICKEN BUCKET. THIS MATERIAL IS ABSORBENT AND NOT CLEANABLE AND A CLEANABLE METAL OR PLASTIC STAND SHOULD BE USED FOR THIS PURPOSE.
