The ham is in a container measuring 58.2 F and the lettuce is measuring 50.8 F. The container is hanging above icy water. The icy water is not in contact with the food containers. COS - upon speaking with a staff member, more ice was added to the cold holding station so that there containers holding the food can sit down in the ice and cool.
- KDA_3_50118A2 - --In the walk-in-cooler there is a bag of boiled eggs (out of the shell) that is not dated. A staff member said she had prepped the eggs yesterday (10/21) earlier in the morning. Corrected on Site (COS) - the eggs were dated.
- KDA_4_20211A2 - --There is a single plastic food container with a crack along the bottom of the container. COS - the container was removed.
- KDA_4_60111A - --There were 7 containers being stored as clean that have a sticky residue on the outside of the containers. Corrected on Site (COS) - these containers were moved to ware washing to be cleaned.
- KDA_4_90311B - --There are stainless steel pans that have been stacked together while still wet. There are round pizza pans in the pizza prep area that are being stored neither covered nor inverted.
- KDA_7_20111B - --In the chemical closet there are packages of Air Wick Air Freshener being stored directly above boxes of gloves and paper towels. COS - the food service director moved the air freshener.
- KDA_Defacto - --Dishes being sanitized in 200ppm Quaternary Ammonia (label calls for 150-400ppm). --Frozen foods delivered frozen. --Quaternary Ammonia test strips were available. --Taco Meat prepared yesterday being reheated today for hot holding - 180.1 F, Pizza being cooked for hot holding - 177.9 F --The quaternary ammonia dispenser at the 3 vat near the back door is dispensing 0ppm quaternary ammonia. The sanitizer bottle hooked to the dispenser is empty. Staff replaced the bottle. --There are frozen foods being thawed by cooking. --Thermometers are calibrate biweekly.
