KDA_5_20213 - --WAREWASHING: The hose used to rinses dishes was hanging below the flood rim of the sink. COS and hung on the wall. Educated that when not in use, it needs to be hung on the wall and until the spring was replaced.

Tomatoes temps were warm at start but PIC stated that door was open for extended period of time and dropped when tempted an hour later. SALAD BAR: Quartered tomatoes - 41.6, Potato Salad - 40.1. New salad bar had been installed since last inspection. Ice bath no longer used. Talked about monitoring temperatures later in the afternoon to check for higher temperatures. --WAREWASHING: Chlorine - 100ppm WORKING BUCKETS: Quat - 200ppm Test strips for both on site.
