- Plumbing system maintained in good repair
Observation: Cold water faucet at the three compartment sink is still leaking when turned on at the faucet and under the sink collecting into a bucket. PIC stated a plumber has looked at the leak and can not fix the leak due to the design of the sink cabinet. The entire three compartment sink and cabinet would need to be removed to reach the leak.

Observation:Reach in freezer by the walk up window is missing one of the two sliding doors. Repair by date listed.

Observation: Cold water faucet at the three compartment sink is still leaking when turned on at the faucet and under the sink. PIC stated a plumber has looked at the leak and stated a new faucet will need to be installed. A plumber will be coming on 10/13 to repair the leak.

Observation: Noro clean up procedure was available onsite, but was not complete. PIC will revise procedure and send a copy to inspector.

Observation: Chlorine sanitizer solution was not mixed up at time of inspection while food preparation was in process. Employee mixed up a new batch at the correct concentration of 50-100 ppm.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Mason jars filled with tahina sauce in the Turbo Air cooler were not date marked. Employee date marked the jars. Prepared sauce at the other establishment location in Cedar Rapids.

Observation: Cheese slices(59F), tahina sauce(46F) were stored out on the counter and not held at required cold holding temperature of 41F or below. Employee discarded the cheese, and placed the sauce in the cooler. Employee plans to use an ice bath on the prep table for cheese, tahina, diced tomatoes, and cut lettuce for temperature control.

Observation: Carton of raw shell eggs stored above produce and ready to eat foods in the Turbo air cooler. Employee removed the eggs and stored correctly below all ready to eat foods.

Observation: Boxes of single service cups stored on the floor. Employee moved cups to shelves.

Observation: Repaired leak at the three compartment sink cold water faucet is leaking again. Drip from pipes under the three compartment sink is collecting in a metal pan.
