Observation: Pop dispensing nozzles are soaked in descaler. They are not washed, rinsed and sanitized prior to re-using. Manager properly cleaned nozzles during inspection.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Front cooler temped at 51 degrees. Deli sandwiches, eggs, milk and cut watermelon temped at 56 degrees. Manager discarded items voluntarily. Cut melon and eggs that were prepped this morning were moved to alternate cooler.
- Storage and maintenance of wet and dry wiping cloths
Observation: Wet wiping cloths are stored in bucket. Cloths were taken to laundry.
- Raw fruits and vegetables washed before cutting, combining with other ingredients, cooked, served, or offered for human consumption in a ready to eat form
Observation: Whole apples offered as ready to eat are not washed prior to sale.
- Using a handwashing sink- operation and maintenance
Observation: Hand sink in Subway has food debris in basin. Manager washed, rinsed and sanitizer during inspection.
